Being trained at the Hotel school Ter Duinen ” at Coxyde, head-chef Erwin Denys started his culinary experience in very famous restaurants such as “ De Karmeliet ”(Brugge ***), “Follies (Mechelen*) and “Margeaux” (Berchem).
He also had various terms of probation in well-known restaurants, viz. “Villesdal”(*), “La Palme d’Or” (**), “Chez Bru” (**) and “De Schone van Boscoop” (*).
Due to his utmost efforts and experience during his last stay at the restaurant “Hippodrome” in Antwerp it has become a solid value in the Antwerp metropolis.

Your guest-lady Caroline Claeys grew up as a youngster in the renowned restaurant “La Souricière” (*)
(De Panne-Adinkerke), run by her parents. Hospitality and passion for the clients were spoon-fed from her early age.

“RASCASSE” means in fact “scorpion-fish”. Chef Erwin prefers cooking with fish, but carnivora will be excellently served as well on their becks and calls. Each yearly-season the taste and freshness of the ingredients are given priority.

From now on Erwin and Caroline are ready to welcome cordially all their customers in their elegant restaurant “RASCASSE”.
