Chef Erwin Denys and hostess Caroline Claeys, the extremely friendly owners, transformed the former Café Jagersrust into a very successful but very accessible restaurant. This since 2008.
Speaking of experience and knowledge...Caroline inherited her culinary genes from home.
Her parents ran the famous restaurant La Souricière in Adinkerke for many years.
Erwin completed training at several star restaurants.
The menu of Rascasse, which means Scorpion Fish, has a nice mix of beautiful fish and meat dishes where the product is absolutely central.
Erwin is one of the "North Sea chefs" who say that unloved and lesser-known fish species and by-catches, caught by Belgian & Dutch fishermen, are handled responsibly.
Erwin also works with a lot of respect for the seasons and you notice this in the tasteful plate creations.
In the cozy restaurant you will be served in a particularly hospitable manner by Caroline, who was named hostess of the year by GaultMillau.
That culinary pleasure translates into seasonal three-, four- or five-course discovery menus.
